head in the clouds | méthode champenoise
an ever-evolving blend of chenin, chardonnay, pinot blanc and melon de bourgogne
crafting a méthode champenoise is where i go to daydream. how can i best capture a site by intervening through this style of wine? what should the bubble be like? how long should the base wine be aged, and, once that’s decided upon, what length of tirage should follow? should i add dosage? if not, how do i balance the mid palate? the questions feel endless, and the possibilities infinite. it is invigorating and exciting - perfectly encapsulating what i love most about making wine. it leaves me adrift in a dream state, as if my head is in the clouds, working tirelessly to find answers to those questions; hopefully achieving the goal of determining how to best capture my feelings of a site, and the people who farm it.
